Gluten Free, Delicious and Fast Peanut Butter Cookies!

Is your sweet tooth is getting the best of you but you want to watch your waistline? Well, we have a fast, easy and delicious recipe for peanut butter cookies that will satisfy even the pickiest person. Added bonus is that these lovely delights only require 6 ingredients, take 20 minutes to prepare and are gluten free but taste just a wonderful as the original ;)

 

 

 

Yummy Gluten Free peanut butter cookies

Makes 24 cookies

Prep time: 10 minutes

Total time: 22 minutes

 

1 cup unsalted, natural crunchy peanut butter (or natural almond butter)

¾ cup organic Sucanat (cane sugar)

1 large egg

½ tsp baking soda

¼ tsp salt (I like to use Celtic grey sea salt)

3 oz fair trade dark chocolate broken into small pieces OR chocolate chips

Method:

  1. Preheat oven to 350 F. In a bowl, stir together first five ingredients until blend. Fold in chocolate
  2. Spoon cookie mix by rounded tablespoon onto parchment lined baking sheet.
  3. Bake for 10 – 12 minutes or until lightly browned. Let cool on baking sheet for 5 minutes then transfer to a wire cooling rack to cool for another 15 minutes.
  4. Enjoy!
